Ingredients
- 4 Rashers Bacon (Optional)
- 1 dsp olive oil
- 1 Large onion Chopped
- 4 Cloves garlic Chopped and Crushed
- 1 leek
- 3 carrots Chopped
- 2 Cans chopped tomatoes
- 1 tbsp tomato puree
- 2 tbsp Dried Oregano
- 1.5 Litres Vegetable Stock
- 150 g Pasta Shapes
- 100 g Cabbage or Kale
- 2 Cans Butter Beans
- Sea salt and balck pepper to season
Method
1. Heat the olive oil in a large saucepan over a medium heat. Add the bacon and cook until slightly browned.
2. Add the onion, garlic, leeks, carrots and celery and cook for 2-3 minutes until slightly softened, but not browned.
3. Stir in the tinned tomatoes, tomato puree and oregano, and pour in the stock.
4. Add the pasta, cabbage or kale and beans allow to simmer gently for 10-12minutes until the pasta is cooked.
5. You can add more stock at this stage if you prefer a thinner consistency.

Ingredients
- 500 g Beef Mince
- 1 Egg whisked
- 1/2 red onion finely chopped
- 1 tsp Dried Oregano
- sea salt and black pepper
- 4 slices cheese
- 1/2 white cabbage finely sliced
- 2 carrots grated
- 1/2 red onion finely sliced
- 1 tbsp Natural yoghurt
- 1 tbsp olive oil
- 1 dsp white wine vinegar
- 1 tsp Dijon Mustard
- Sea salt and balck pepper to season
Method
Place the mince in a large bowl and combine with the whisked egg, chopped onion, herbs and season well with salt and pepper.
Divide the mixture in four and roll into balls. Flatten with the palm of your hand so the patties are about 3cm thick. Wet hands slightly to help stop mixture sticking
Set on a plate and refrigerate for 30 minutes.
Meanwhile, make the slaw by combining the cabbage, carrot and red onion in a large bowl.
Whisk together the yoghurt, olive oil, mustard and lemon juice in a small bowl. Season with sea salt and black pepper to taste.
Pour the dressing over the vegetables and toss well. Set aside while you cook the burgers.
Cook burgers under a medium hot grill for 15 minutes, turning halfway through cooking. Check the burgers are cooked through before serving.
Serve inside a wholemeal bap with healthy slaw and cheese. For a healthier option, just serve with a big dollop of slaw and no bap.

Ingredients
- 450 g lean ground beef
- 3/4 cup white onion finely chopped
- 1/2 cup red bell pepper finely chopped
- 4 cloves garlic chopped
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 2 tsp Oregano
- 1 tsp Coriander
- 400 g chopped tomatoes
- 1/4 cup water
- 250 g tortilla chips
- 2 cups shredded cheese
Method

Fry beef, onion, pepper and garlic in a large pan over a medium heat for10 minutes.
Stir in chili powder, cumin, oregano and coriander
Stir for 30 seconds and add tomatoes and water and simmer for 5 minutes.
Top chips with the chili and cheese. Bake until the cheese is melted, about 7 minutes.

- 25 ml Chambord

Ingredients
- 40 ml Absolut Vanilla Vodka
- 25 ml Coffee Liqueur
- Shot Frank and Honest Espresso Coffee
- 10 ml Sugar Syrup
Method
Fill the cocktail shaker (or other vessel) with ice.
Shake the drink in a cocktail shaker.
Strain into a chilled martini glass.
Enjoy. If you want more foam on the drink put it back in the shaker without ice and give it a quick shake.

- 35 ml Jameson Irish Whiskey
- 100 ml Fevertree Ginger Ale
- 1 Lime Wedge
Method
Fill a long glass with ice and pour in the whiskey.
Top up with ginger ale, squeeze in the lime wedge.
