Ingredients
- 175 grams plain tortilla chips
- 200 grams salsa
- 3 Spring onions sliced
- 100 grams grated cheese
- crushed chilli flakes
- jalapenos optional
- sour cream or guacamole
Method
Put tortilla chips on to a baking tray, pour over salsa and scatter over a few sliced spring onions.
Add your grated cheese, plus a pinch of crushed chilli flakes and jalapenos (optional) then put under a hot grill for around 3 minutes to melt the cheese. Serve with soured cream or guacamole (optional). Enjoy!

Ingredients
- 450 g lean ground beef
- 3/4 cup white onion finely chopped
- 1/2 cup red bell pepper finely chopped
- 4 cloves garlic chopped
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 2 tsp Oregano
- 1 tsp Coriander
- 400 g chopped tomatoes
- 1/4 cup water
- 250 g tortilla chips
- 2 cups shredded cheese
Method

Fry beef, onion, pepper and garlic in a large pan over a medium heat for10 minutes.
Stir in chili powder, cumin, oregano and coriander
Stir for 30 seconds and add tomatoes and water and simmer for 5 minutes.
Top chips with the chili and cheese. Bake until the cheese is melted, about 7 minutes.

Ingredients
- Chipolata Sausages
- Streaky Bacon
- 200 g Sure setting sugar
- 200 ml Fresh orange juice
- 450 g Fresh or Frozen Cranberry
Method
Wrap chipolata sausages in streaky bacon and oven cook for 30 mins
Pour your sugar and orange juice into a deep saucepan, bring to the boil.
Stir in the cranberries, then simmer until tender but still holding their shape.
This will take about 5 mins if using frozen cranberries or 8-10 mins if using fresh.
Once of the boil, pour into jam jars and put the lid on tight
The cranberry sauce will thicken as it cools in the jars

Ingredients
- 6 Bananas
- 1 Dark Cooking Chocolate
- 1 litre Fresh Milk
Method
Make sure the bananas are over ripe for this one.
Mash 6 bananas with milk until you get a soft consistency.
Break up the dark chocolate into mini pieces and mix in.
Place in a bowl and put into the freezer overnight.
When serving, leave to thaw for about 20 mins before.
Garnish with shaven chocolate and preferred fruit

Ingredients
- 150 g self raising flour
- Sunflower oil
- 1 onion cut into 1cm slices
- 180 ml Sparkling water
Method
Slice onion into rings about 1cm wide.
Remove the skin and separate the rings.
Heat the oil to 180oC in a heavy-based pan - it should be no more than 1/3 full.
Put the flour and sparkling water in a bowl and season generously.
Whisk together to form a batter.
Coat a small batch of onion rings in batter. Carefully lower into the hot oil and deep-fry until crisp and golden, about 2 - 3 minutes.
Remove with a spoon and place on piece of kitchen towel to drain.
Repeat with the remaining onion and batter.

- 2 Bananas chopped
- 2 Kiwi cut into chunks

Ingredients
- 200 g self raising flour
- 2 tsp ground cinnamon
- 50 g porridge oats
- 3 Bananas mashed
- 2 Eggs
- 3 tbsp Natural low-fat yogurt
- 1 tbsp honey
Method
Preheat your oven to 180C/350F/Gas 4.
Line a 2lb loaf tin with baking paper.
Sieve the flour with the cinnamon into a large mixing bowl and stir in the oats.
Add the banana, eggs, yoghurt and honey and mix together well using a hand mixer.
Pour the mixture into the loaf tin and bake for about an hour (55-60 minutes).
Use a skewer to test it is cooked in the middle – when it is, the skewer will come out clean.
Remove from the oven, cool slightly in the tin and then transfer to a wire cooling rack to cool completely before serving.

Ingredients
- 400 g tin butter beans (drained, juice kept)
- 3 cloves garlic crushed
- 2 dessert spoons peanut butter
- 1 tbsp cooking oil or olive oil
Method
Put crushed garlic in a food processor, blitz to chop finely.
Next, add the butterbeans and the peanut butter and blitz again, seasoning with salt and pepper.
Add oil and if mix looks too dry add a little of the juice from the tin and blitz once more to amalgamate.
Serve with raw vegetables such as cauliflower florets, celery or carrot sticks.
