Ingredients
- 1/2 tsp granulated sugar
- 1 wedge lime
- 3 Strawberries
- 85 ml Gin
- club soda
- fresh mint or rosemary to garnish
Method
In a tall glass, combine the sugar and a squeeze of juice from the lime wedge. Muddle with the back of a spoon to dissolve the sugar. Add the sliced strawberries and lightly muddle.
Fill the glass with ice and add the gin. Top with a splash of club soda and garnish with the last strawberry and a sprig of mint or rosemary

Ingredients
- 200 ml Vodka
- 200 ml Cointreau
- 600 ml cranberry juice
- 400 ml orange juice
- 2/3 strips of peel limes
- Ice crushed
Method
Pour the vodka and Cointreau into a jug, then add the cranberry juice and orange juice. Stir well.
Pare strips of peel from 2-3 limes. Fill 12 glasses with the crushed ice, then pour over the cocktail. Finish each glass with a strip of lime peel.

Ingredients
- mint leaves bunch
- 120 ml simple syrup
- 120 ml Lime Juice
- 150 ml rum
- 1 bottle rosé
- 1 can grapefruit sparkling water
- Ice crushed
- grapefruit to garnish
- mint to garnish
Method
In a large pitcher, gently muddle mint with simple syrup.
Pour lime juice, rum, and rosé into the pitcher.
Top with grapefruit sparkling water.
Stir well and serve over ice.
Garnish with mint leaves and a grapefruit slice.

Ingredients
- 1 tbsp olive oil
- 1 onion chopped finely
- 250 grams Beef Mince
- 1 tsp hot smoked paprika
- 1 tsp ground cumin
- 1/2 tsp Chilli Powder
- 200 grams Black Beans drained
- 200 grams tortilla chips lightly salted
- 150 grams cheddar grated
- 100 grams cherry tomatoes quartered
- salt and pepper to season
- 4 Spring onions lightly chopped
- Coriander optional
- Chopped Chilli optional
- lime wedges
- Sour Cream
Method
Preheat the oven to 200C/180C Fan/Gas 6. Heat the oil in a frying pan over a medium heat, add the onion and cook for 3–5 minutes until soft and translucent.
Increase the heat and add the beef, paprika, cumin and chilli powder. Cook for 5-10 minutes, stirring occasionally, until the beef is browned.
Reduce the heat to medium and add the black beans, stirring gently, until the beans are heated through. Season with salt and pepper.
Line the base of a 1.5 litre/2¾ pint ovenproof dish or baking tray with a single layer of tortilla chips, then top with half of the beef mixture, then half the cheddar and half the cherry tomatoes. Add a second layer of tortilla chips, then top with the remaining beef and cheese. Transfer to the oven and cook for 8–10 mins, until the cheese has melted.
Remove the nachos from the oven and top with the remaining cherry tomatoes, spring onions, coriander and chilli, if using. Serve hot with the soured cream and lime wedges.

Ingredients
- 750 ml Spanish red wine
- 200 ml orange juice
- 1 Lemon
- 1 apple Chopped
- lemonade To top
Method
Fill a large jug with ice then add and stir together the red wine and orange juice.
Add in the chopped lemon and apple.
Top with lemonade. The more you add, the sweeter the sangria.

- 2 cups Vanilla ice cream
- 2 cups milk
- 8 Oreo cookies
Method
Add the ice cream, milk and Oreo cookies to your blender. Pulse until mostly smooth.
Serve in large glasses with whipped cream if desired.

- 50 ml Tequila
- 25 ml Cointreau
- 25 ml Fresh lime juice
Method
Pour the tequila, Cointreau and fresh lime juice into a glass full of ice (with salt on the rim).
Stir well until the outside of the glass feels cold. Garnish with a wedge of lime wheel.

Ingredients
- 2 70cl bottles red wine
- 100 ml Cointreau
- 2 large Oranges peeled zest and juice
- 1 pared zest of Lemon
- 120 g golden caster sugar
- 2 cinnamon sticks
- 3 Star anise
- 4 Cloves
- 1 orange Sliced
Method
Put all the ingredients (except the slices of orange) in a slow cooker on low for 1 1/2 - 2hrs until hot. Ladle into heatproof glasses and serve with slices of orange. Using the 'keep warm' setting (if your cooker has one) will ensure the mulled wine stays hot during the party.

Ingredients
- 3 tbsp mint leaves (about 7 or 8 leaves)
- 1/2 of a whole Lemon cut into 4 pieces
- 1 tbsp white sugar
- 2 ounces irish whiskey
- 1 cup Crushed Ice
Method
1. Place the mint, lemon, and sugar in a cocktail shaker. Muddle together until the sugar has dissolved and the lemon has expressed its juices.
2. Add the whiskey, cover, and shake for 30 seconds. Transfer mixture to an Old Fashioned glass.
3. Top with crushed ice and garnish with a sprig of mint.
