Ingredients

  • 750 ml Spanish red wine
  • 200 ml orange juice
  • 1 Lemon
  • 1 apple Chopped
  • lemonade To top

Method

  1. Fill a large jug with ice then add and stir together the red wine and orange juice.
  2. Add in the chopped lemon and apple.
  3. Top with lemonade. The more you add, the sweeter the sangria.

Ingredients

  • 2 tablespoons butter
  • 1 Fresh For You egg
  • 3 tablespoons Chocolate Buttons
  • 2 tablespoons caster sugar
  • 2 tablespoons self raising flour
  • 1 tablespoon Nutella
  • Sprinkles to serve (optional)

Method

  1. Add butter and chocolate buttons into four large mugs. Microwave for 40 seconds or until melted
  2. Stir 1 tablespoon of sugar into the mug
  3. In a bowl, beat the eggs and add to you mug.
  4. Mix in the flour and Nutella to the centre of your mug.
  5. Cook in the microwave for 1 minute (800 watts) until the tops of the cake has turned opaque.
  6. Let it cool and serve with sprinkles (optional)
  7. No chocolate buttons? use chocolate chips or a broken-up chocolate bar. No self-raising flour? Use plain and add a small amount of baking powder to each mug.

Ingredients

  • 500 grams Fresh for you Beef Mince
  • 1 Fresh For You egg
  • 1/2 Fresh For You Onion
  • 4 Burger Baps
  • 4 Coleraine Cheddar Slices
  • 500 grams You Say Potato Chips
  • 1 tablespoon Dried Herbs

Method

  1. Place the mince in a large bowl and combine with the whisked egg, chopped onion, herbs and season well with salt and pepper.
  2. Divide the mixture in four and roll into balls. Flatten with the palm of your hand so the patties are about 3cm thick. Wet hands slightly to help stop mixture sticking
  3. Set on a plate and refrigerate for 30 minutes.
  4. Meanwhile, pre heat oven to 180 degrees.
  5. Empty chips into a pan of boiling water, simmer for 8 minutes.
  6. Drain the chips, then toss in 2-4 tablespoons of oil and place on an oven tray.
  7. Place in the oven and bake for approx. 30 mins, shaking halfway through.
  8. 15 mins before the chips are ready, put the burgers on a baking tray and bake for 10 mins, then add the cheese on top to melt for 2 minutes. Alternatively, cook on the BBQ for the same length of time. Ensure both are cooked piping hot before serving.
  9. Serve the burger inside a bap, with the chips on the side.

Ingredients

  • 4 Egg Whites
  • 250 grams caster sugar
  • 1 teaspoon white wine vinegar
  • 1 teaspoon Cornflour
  • 1 teaspoon vanilla extract
  • 500 grams Raspberries
  • 200 grams Blueberries
  • 3 tablespoons Icing sugar
  • 350 millilitres Double cream

Method

  1. Heat oven to 150C and using a pencil, mark out the circumference of a dinner plate on baking parchment. 
  2. Whisk 4 egg whites with a hand mixer until they form stiff peaks, then whisk in 250g caster sugar, 1 tbsp at a time, until the meringue looks glossy. 
  3. Whisk in 1 tsp white wine vinegar, 1 tsp cornflour and 1 tsp vanilla extract.
  4. Spread the meringue inside the circle, creating a crater by making the sides a little higher than the middle.
  5. Bake for 1 hr, then turn off the heat and let the Pavlova cool completely inside the oven. When the meringue is cool, chop 100g of the hulled raspberries. Mix them with 2 tbsp icing sugar.
  6. Place in a food processor, blitz until smooth, then push the fruit mixture through a sieve. 
  7. Whip 350ml double cream with the remaining 1 tbsp icing sugar and spread it over the meringue. Put the remaining 400g hulled and halved raspberries and blueberries on the cream and finally pour the sauce over the whole lot.

Ingredients

  • 2 cups Vanilla ice cream
  • 2 cups milk
  • 8 Oreo cookies

Method

  1. Add the ice cream, milk and Oreo cookies to your blender. Pulse until mostly smooth.
  2. Serve in large glasses with whipped cream if desired.

Ingredients

  • 50 ml Tequila
  • 25 ml Cointreau
  • 25 ml Fresh lime juice

Method

  1. Pour the tequila, Cointreau and fresh lime juice into a glass full of ice (with salt on the rim).
  2. Stir well until the outside of the glass feels cold. Garnish with a wedge of lime wheel.

  • 40 ml Vodka
  • 20 ml Chambord liqueur

  1. Shake the vodka, Chambord and pineapple juice with ice really hard until the pineapple juice froths up.

Ingredients

  • 125 grams Soft butter
  • 125 grams self raising flour
  • 125 grams caster sugar
  • 2 tablespoons milk
  • 2 large eggs
  • 125 grams unsalted butter
  • 250 grams Icing sugar
  • 1 Lemon zest
  • 1 Lemon juiced

Method

  1. Line the muffin tin with the paper cases. Put all the cake ingredients into a bowl, and beat with an electric whisk until evenly combined and smooth.
  2. Make the icing: put the butter and half of the icing sugar into a bowl, and beat with an electric whisk until evenly combined and smooth. Add the lemon juice and the remaining icing sugar, and beat again until light and fluffy.
  3. Spread the icing over the cold cup cakes, and decorate with a slice of lemon.

Ingredients

  • 2 cups Baby potatoes
  • 1 garlic clove
  • 4 tablespoons butter
  • 2 cups Champignon mushrooms
  • 1 sprig rosemary
  • 1 tablespoons Fresh basil
  • 3 tablespoons Soy Sauce

Method

  1. Wash potatoes thoroughly and place them in a small pot. Add water enough to cover the top. Pour in 2 tablespoons of soy sauce.  
  2. Boil baby potatoes for 10-15 minutes or just until cooked. Do not overcook potatoes, check by poking one with a toothpick. If it comes through easily then it should be done.
  3. Cut baby potatoes in halves. In a pan or skillet, melt butter over medium heat and saute garlic until tender. 
  4. Add potatoes and mushroom and cook until edges are browned. Add rosemary and basil and 1 tablespoon soy sauce and season with salt and pepper as needed.
  5. Remove from pan and transfer to a serving dish. Enjoy as a side to your favorite chicken, pork or beef dish!
