Ingredients

  • 2 cups Pasta
  • 1 can tuna
  • 1 cup cherry tomatoes
  • 2 cups arugula
  • 2 tbsp olive oil
  • 2 tbsp Freshly Squeezed Lemon Juice

Method

  1. 1. Cook the pasta of your choice according to package instructions.
  2. 2. While the pasta is cooking, cut the zucchini and cherry tomatoes into bite-sized pieces. 
  3. 3. Add a drizzle of olive oil to a large pan and allow to heat up for a few minutes, then add the zucchini and cherry tomatoes to the pan, sauteing for about 5 – 10 minutes with a little sea salt and pepper.
  4. 4. During the final minute of sauteing the vegetables add in the arugula and cook until almost wilted.
  5. 5. Drain most of the pasta, reserving just a tbsp or two of the pasta water and pour the pasta back into the pot with the olive oil and lemon juice. Add in the canned tuna (chopped up with a fork) and sauteed vegetables.
  6. 6. Divide between two plates, sprinkle some black pepper on top and enjoy.

Ingredients

  • 0.5 Centra Avocado Very Ripe
  • 50 g Centra Mixed Chillies Green
  • 1 Centra Scallions
  • 2 Lettuce Leaves
  • 2 tbsp Mayonnaise
  • 0.25 Olives Green
  • 1 can tuna

Method

  1. Cut olives in half and dice scallion.
  2. Mash the avocado until it’s a creamy consistency, and then mix with paleo mayonnaise.
  3. Add in the tuna, olives, scallion, and diced green chilies to the avocado-mayonnaise mixture.
  4. Place one scoop of tuna salad into a large leaf of lettuce and wrap.

  • 1 pinch Black Pepper
  • 1 handful Blueberries
  • 1 red onion
  • 1 handful white grapes
  • 1 handful cherry tomatoes
  • 1 handful flaked almonds
  • 1 tbsp Greek Yoghurt
  • 1 dollop Lemon juice
  • 1 pack rocket leaves
  • 1 handful Strawberries
  • 1 rub tuna

Method

  1. Very simply prepare veg and fruit/berries and mix together in a salad bowl. Add tuna to top and sprinkle with flaked almonds, walnuts, Greek yogurt, lemon juice and black pepper.
  2. So easy, tasty and ideal for unplanned days when you’re on the move.
