Ingredients

  • 200 grams Raspberries
  • 100 grams Strawberries sliced
  • 100 grams Blueberries
  • 200 grams greek yogurt
  • 1 teaspoon vanilla extract
  • 8 tablespoons granola of choice
  • 4 teaspoons clear honey

Method

  1. Put half the raspberries into a bowl and give them a good crush with a fork. Mix together the rest of the raspberries with the strawberries and blueberries, and share between 4 serving glasses
  2. Mix the yogurt and vanilla extract together, then dollop into the glasses. Top each serving with the crushed raspberries and 2 tablespoons of granola, then drizzle a teaspoon of honey over the top. Cover and chill until ready to serve
  3. To make your morning even more chilled, most of the preparation could be done the evening before and left in the fridge overnight, ready for breakfast. Just sprinkle the granola over in the morning and off you go .
  4. For breakfast on the go, seal the pots with lids and take with you to eat later

Ingredients

  • 100 grams unsalted butter softened
  • 140 grams golden caster sugar
  • 2 large eggs
  • 140 grams natual yogurt
  • 1 tsp vanilla extract
  • 2 tbsp milk
  • 250 grams plain flour
  • 2 tsp baking powder
  • 1 tsp Bicarbonate of soda
  • 125 grams Blueberries or frozen
  • 3 large Bananas mashed

Method

  1. Heat oven to 200C/180C fan/gas 6 and line a 12-hole muffin tin with paper cases. Beat the butter and caster sugar together until pale and fluffy. Add the eggs and beat in for 1 min, then mix in the yogurt, vanilla extract, milk and mashed bananas. Combine the flour, baking powder and bicarb in a bowl with 1/4 tsp fine salt, then tip this into the wet ingredients and stir in. Finally, fold in the blueberries and divide the mixture between the muffin cases.
  2. Bake for 5 mins, then reduce oven to 180C/160C fan/gas 4 and bake for 15-18 mins more until risen and golden, and a cocktail stick inserted into the centre comes out clean.
  3. Cool in the tin for 10 mins, then carefully lift out onto a wire rack to finish cooling. Will keep for 3-4 days in an airtight container – after a day or two, pop them in the microwave for 10-15 secs on high to freshen up.

Ingredients

  • 75 grams Strawberries
  • 60 grams Raspberries
  • 55 grams Blackberries
  • 1 Banana sliced
  • 140 grams greek yogurt
  • 60 mls Almond Milk or soy milk
  • 60 grams peanut butter

Method

  1. Add the berries, banana, Greek yogurt, almond milk, and peanut butter to a blender and blend until smooth.

Ingredients

  • 145 grams Strawberries
  • 150 grams Blueberries
  • 3 tbsp Sugar
  • 8-12 small scoops Lemon Sorbet
  • 250 grams Vanilla Yogurt or whipped cream
  • mint leaves optional

Method

  1. Wash berries; hull and slice the strawberries. Stem the blueberries. Put all of the berries in a bowl and add the 3 tablespoons of granulated sugar. Let stand for about 20 minutes for the juices to come out.
  2. Scoop half of the sorbet into four to six dessert dishes, brandy snifters, martini glasses, or other dish or glass.
  3. Spoon half of the strawberry-blueberry mixture over the sorbet, and then top with a few tablespoons of yogurt, whipped topping or whipped cream.
  4. Repeat with the remaining sorbet, berries, and topping. Garnish with some mint if you'd like.

Ingredients

  • 4 Egg Whites
  • 250 grams caster sugar
  • 1 teaspoon white wine vinegar
  • 1 teaspoon Cornflour
  • 1 teaspoon vanilla extract
  • 500 grams Raspberries
  • 200 grams Blueberries
  • 3 tablespoons Icing sugar
  • 350 millilitres Double cream

Method

  1. Heat oven to 150C and using a pencil, mark out the circumference of a dinner plate on baking parchment. 
  2. Whisk 4 egg whites with a hand mixer until they form stiff peaks, then whisk in 250g caster sugar, 1 tbsp at a time, until the meringue looks glossy. 
  3. Whisk in 1 tsp white wine vinegar, 1 tsp cornflour and 1 tsp vanilla extract.
  4. Spread the meringue inside the circle, creating a crater by making the sides a little higher than the middle.
  5. Bake for 1 hr, then turn off the heat and let the Pavlova cool completely inside the oven. When the meringue is cool, chop 100g of the hulled raspberries. Mix them with 2 tbsp icing sugar.
  6. Place in a food processor, blitz until smooth, then push the fruit mixture through a sieve. 
  7. Whip 350ml double cream with the remaining 1 tbsp icing sugar and spread it over the meringue. Put the remaining 400g hulled and halved raspberries and blueberries on the cream and finally pour the sauce over the whole lot.

Ingredients

  • 1 handful Blueberries
  • 1 tbsp Chia Seeds
  • 1 tsp Cinnamon
  • 230 ml milk
  • 2 tbsp Mixed Nuts
  • 1 tbsp Natural yogurt
  • 0.5 jar porridge oats

Method

  1. Half fill the jar with oats. Tip: add 1 tbsp of chia seeds for some omega-3s.
  2. Fill the glass with your chosen liquid milk/ orange juice until the oats are well covered. Alternatively use soy milk, coconut milk, almond milk, rice milk or oat milk
  3. Add your toppings such as nuts or seeds, some ideas include: almonds, hazelnuts, walnuts, cashew nuts, flax seeds, chia seeds, raisins, all kinds of berries, fruits like banana, cherries, apples or pears, sunflower seeds.
  4. For extra flavor refine the overnight cereal with cinnamon or alternatively vanilla, cocoa powder, ginger powder or gingerbread spice.
  5. Let sit overnight in the fridge, in the morning top off with some yogurt, berries
