Ingredients

  • dsp olive oil or coconut oil
  • 1 large onion chopped
  • 5 or 6 medium carrots chopped
  • 750 ml vegetable or chicken stock
  • 1 inch Root Ginger peeled and grated
  • 1/2 orange juice and zest

Method

  1. Heat the oil in a heavy based pan.
  2. Add the onion and cook until translucent.
  3. Add the carrots and stock. Simmer for 8-10 minutes, until the carrots are tender.
  4. Remove from the heat.
  5. Grate in the root ginger and add the orange juice and zest.
  6. Blitz in your blender until smooth.
