Run Together 2022 - Armagh - Spaghetti Bolognese

Ingredients
- 2 tbsp olive oil
- 400 g Beef Mince
- 1 onion diced
- 4 garlic cloves chopped
- 100 g tomato puree
- 800 g Tinned Chopped Tomatoes
- 350 g Dried Spaghetti
- salt and pepper
- 2 tsp Sugar optional
- 100 g cheese grated, optional
- Vegan Version: Replace the beef with the equivalent in red lentils
Method
- Heat oil in a large pan over a medium heat. When hot add the beef mince. Cook until browned. (*Cook lentils as per the packet instructions).
- Meanwhile fry the onions gently for 5-6 minutes, or until softened. Add the garlic & cook for another 2 minutes.
- Add the tomato puree & mix well, then mix in the tomatoes & reduce to a simmer for 45 minutes, or until the sauce is thick & rich. Taste & adjust the seasoning, as necessary. You can add the sugar* if there is any sharpness.
- Meanwhile bring a pot of water to the boil. Add the spaghetti & when cooked through, drain (do not rinse) & serve.
